Pole Position Power Bowl
A nutrient-packed grain bowl loaded with colourful produce to keep you fueled from the first lap to the finish line.
Ingredients:
2 cups cooked quinoa
1 cup roasted sweet potatoes, diced
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1 avocado, sliced
2 grilled chicken breasts, sliced
¼ cup pumpkin seeds
Fresh parsley
Citrus Green Flag Dressing
Juice of 1 orange
2 tbsp olive oil
1 tbsp Dijon mustard
1 tsp maple syrup
Salt and pepper
Directions:
Preheat oven to 425°F (220°C).
Toss sweet potatoes with olive oil and roast for 20–25 minutes.
Prepare quinoa according to package directions.
Whisk dressing ingredients together.
Divide quinoa among four bowls and top with sweet potatoes, cucumber, tomatoes, avocado, and chicken.
Drizzle with dressing and garnish with parsley and pumpkin seeds.
