A nutrient-packed grain bowl loaded with colourful produce to keep you fueled from the first lap to the finish line.

Ingredients:

  • 2 cups cooked quinoa

  • 1 cup roasted sweet potatoes, diced

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1 avocado, sliced

  • 2 grilled chicken breasts, sliced

  • ¼ cup pumpkin seeds

  • Fresh parsley

    Citrus Green Flag Dressing

  • Juice of 1 orange

  • 2 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tsp maple syrup

  • Salt and pepper

Directions:

  • Preheat oven to 425°F (220°C).

  • Toss sweet potatoes with olive oil and roast for 20–25 minutes.

  • Prepare quinoa according to package directions.

  • Whisk dressing ingredients together.

  • Divide quinoa among four bowls and top with sweet potatoes, cucumber, tomatoes, avocado, and chicken.

  • Drizzle with dressing and garnish with parsley and pumpkin seeds.
