Ingredients:

  • 1 cup dry quinoa

  • 3 cups grilled chicken, sliced (or 2 blocks firm tofu, grilled and cubed)

  • 1 1/2 cups cherry tomatoes, halved

  • 1 large cucumber, diced

  • 2 avocados, sliced or diced

  • 4 cups baby spinach

  • 3/4 cup lemon vinaigrette

Directions:

  • Cook quinoa according to package directions and let cool slightly.

  • Divide baby spinach among serving bowls.

  • Top with quinoa, grilled chicken or tofu, cherry tomatoes, cucumber, and avocado.

  • Drizzle with lemon vinaigrette before serving.

  • Serve immediately or chilled.
