Canadian Harvest Power Bowl
Balanced fuel to keep you at the front of the pack.
Ingredients:
1 cup dry quinoa
3 cups grilled chicken, sliced (or 2 blocks firm tofu, grilled and cubed)
1 1/2 cups cherry tomatoes, halved
1 large cucumber, diced
2 avocados, sliced or diced
4 cups baby spinach
3/4 cup lemon vinaigrette
Directions:
Cook quinoa according to package directions and let cool slightly.
Divide baby spinach among serving bowls.
Top with quinoa, grilled chicken or tofu, cherry tomatoes, cucumber, and avocado.
Drizzle with lemon vinaigrette before serving.
Serve immediately or chilled.
